Claypot Chicken Rice w/ Chinese Sausage and Baby Bok Choy

Beside the aroma coming from the delicious meal within the Chinese claypot, is the unforgettable “crispy” and “burnt” rice. Something I miss so much growing up in a restaurant family. I recall how my mother made similar dishes using aluminum pots. Sometimes, my mom would use a cheap rice cooker to make similar dishes. Oh, how I missed my mom’s cooking and that delicious crispy rice.

To make this dish, you will need to have a Chinese sand claypot.  They are very cheap and easily found on an Asian grocery store.  Make sure to purchase claypot with the glazed interior.  The unglazed porous clay exterior is very delicate and come with a wired frame.

This one meal wonder is filled with flavored rice.  As the claypot slowly cooks, the chicken, sausage, and vegetables slowly infuses into the rice.  Something that all Chinese food loving people enjoy.  I have not found one person who does not like to eat this dish.  It is so easy to make.

Marinate Chicken:
1/2 lb of chicken meat (I prefer boneless dark)
2T Soy Sauce
2T Oyster Sauce
2T Chinese wine or 1t of hard liquor
1t sugar

Chicken Sauce:
1T dark sauce
1t sesame oil
1T soy sauce
1T oyster sauce
1T chinese wine (Hua Tiou)
1t sugar
1t salt
Some white pepper

Garnish and Topping:
1 link Chinese Sausage
1 stalk spring green onions
2 pieces of red chillies

Important Information:

These sand claypot are extremely sensitive to change in temperature.  Hair-line cracks can occur if you are not careful in using it. If it cracks, just replace it as it’s very cheap.
